As I said in my last blog post, my New Years’ resolution for 2017 was to expand my baking skills. So to start off the year, I decided to try out some vegan biscuits.
To finish off my Christmas break, before heading back to work, I had a weekend retreat with my close friends in the Forest of Dean. The night before I stopped over in Bristol to see my brother and sister in law and (mainly to see) this little cutie Moses 🙂 .
So of course, I had to do a little baking. Both my brother and sister in law are taking part in Veganuary, going Vegan in January, hence why I chose to start my resolution with baking something Vegan and also Gluten free (for Nic).
Not having a lot of knowledge on Vegan baking, apart from the research I did for cakes for the wedding (https://ohmycrumbscakes.com/2016/11/06/a-vegan-wedding/), I decided to use the ever trusting Pinterest to search for some fun recipes and ideas. I stumbled upon these Spiced Orange Oatmeal Cookies (http://wallflowerkitchen.com/spiced-orange-oatmeal-raisin-cookies/) and Vegan Iced Gems (http://wallflowerkitchen.com/vegan-iced-gems/).
Both of these recipes were fairly simple and used ingredients that were already stashed in my kitchen cupboards. To make them Gluten free, I swapped the flour to Gluten free flour. I also added a orange icing to drizzle on top of the Oatmeal cookies to sweeten them slightly.
So going Vegan isn’t as difficult as you think, and tasty, fun and easy treats can be made without any harm to animals. I definitely will be trying out more Vegan recipes as the year goes on!
