It was my gorgeous friend Sophie’s birthday yesterday, so of course, I had to make a cake. I decided to make a banana and chocolate chip sponge cake with a Nutella buttercream filling.
I made a simple banana sponge with tons of Belgian chocolate chips thrown in (because chocolate always makes everything better 🙂 right?). A creamy Nutella buttercream in between the layers and a light cream cheese buttercream to cover the cake. Then it came to the decoration. I wanted to keep it simple, with a semi naked buttercream covering.
Then I had a light bulb moment, I could do a caramel drip. So I made a caramel sauce, let it cool slightly and dripped it on the edge of the cake and poured the rest in the middle. And without realising, I had made a Banoffe cake!
